  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 large onion, chopped
  • 45 cloves garlic, minced
  • 4 large carrots, peeled and cut into chunks
  • 4 medium potatoes, cut into chunks
  • 3 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf

Instructions

  1. Season the beef roast generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.
  3. Place the seared roast in the slow cooker. Add chopped onion, garlic, carrots, and potatoes around the roast.
  4. In a bowl, combine beef broth, Worcestershire sauce, thyme, rosemary, and bay leaf. Pour this mixture over the roast and vegetables.
  5. Cover and cook on low for 8 hours or on high for 4-5 hours, until the meat is tender and easily shredded.
