Ingredients:

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Juice of 1 lemon

Directions:

  1. Season the salmon fillets with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the salmon fillets, skin side up, and cook for 4-5 minutes per side, until golden brown and cooked through. Remove and set aside.
