  • 1 1/2 lbs. potatoes (Yukon Gold, russet, or red)
  • 1 1/2 tbsp. olive oil
  • 1/2 tsp. salt
  • 1/3 tsp. pepper
  • 1/2 tbsp. taco seasoning (or your favorite seasoning blend)
  • 1/2 tbsp. oregano

For Green Beans:

  • 1 lb. green beans (bright green, without blemishes)
  • 1/2 tbsp. olive oil
  • 4 garlic cloves, minced
  • 1/4 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel the potatoes and cut them into medium-sized cubes. In a large mixing bowl, combine the potatoes with olive oil, taco seasoning, oregano, salt, and pepper. Mix well to coat.
  3. Spread the seasoned potato cubes evenly on a large baking sheet, ensuring they don’t overlap. Bake for 15 minutes.
  4. While the potatoes are baking, add the green beans to the same mixing bowl (no need to wash it). Add olive oil, minced garlic, and salt. Mix everything together.
  5. Remove the baking sheet with the potatoes from the oven, add the green beans, and gently mix them together on the sheet.
  6. Return the baking sheet to the oven and bake for an additional 20-30 minutes, or until the potatoes are tender and the green beans have a slight crisp. Serve hot.
