Ingredients

    • 1 lb salmon fillet (skin removed, finely chopped)
    • 1/2 cup panko crumbs (or substitute with almond meal or cooked quinoa for GF/Paleo)
    • 1 egg
    • 2 green onions, chopped
    • 1/2 poblano pepper, seeded and finely chopped (or bell pepper)
    • 1 tbsp fresh lemon or lime juice
    • 1/2 tsp salt
    • 1/4 tsp black pepper

    For Avocado Salsa:

    • 1 large ripe avocado, peeled and diced
    • 1/2 poblano pepper, finely chopped
    • 2 green onions, chopped
    • 1 tbsp fresh lemon or lime juice
    • 1/4 tsp salt
    • 1/4 tsp black pepper

Instructions

  1. In a large mixing bowl, combine chopped salmon, panko crumbs, egg, green onions, poblano pepper, lemon/lime juice, salt, and pepper. Mix until ingredients are evenly incorporated but avoid overmixing.
  2. Form the mixture into four equal patties.
  3. Heat an indoor grill pan or outdoor grill to medium-high heat.
  4. Grill patties for about 4 minutes per side or until they are cooked through, with edges browned.
  5. For the avocado salsa, combine diced avocado, poblano pepper, green onions, lemon/lime juice, salt, and pepper in a medium bowl. Gently mix until well blended.
  6. Serve salmon patties on a bun or on their own, topped generously with avocado salsa.
