- 1 lb salmon fillet (skin removed, finely chopped)
- 1/2 cup panko crumbs (or substitute with almond meal or cooked quinoa for GF/Paleo)
- 1 egg
- 2 green onions, chopped
- 1/2 poblano pepper, seeded and finely chopped (or bell pepper)
- 1 tbsp fresh lemon or lime juice
- 1/2 tsp salt
- 1/4 tsp black pepper
For Avocado Salsa:
- 1 large ripe avocado, peeled and diced
- 1/2 poblano pepper, finely chopped
- 2 green onions, chopped
- 1 tbsp fresh lemon or lime juice
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large mixing bowl, combine chopped salmon, panko crumbs, egg, green onions, poblano pepper, lemon/lime juice, salt, and pepper. Mix until ingredients are evenly incorporated but avoid overmixing.
- Form the mixture into four equal patties.
- Heat an indoor grill pan or outdoor grill to medium-high heat.
- Grill patties for about 4 minutes per side or until they are cooked through, with edges browned.
- For the avocado salsa, combine diced avocado, poblano pepper, green onions, lemon/lime juice, salt, and pepper in a medium bowl. Gently mix until well blended.
- Serve salmon patties on a bun or on their own, topped generously with avocado salsa.
