  • 4 bone-in pork chops, about 3 pounds
  • Salt and black pepper, to taste
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 10.5 ounces condensed cream of mushroom soup (1 can)
  • 10.5 ounces condensed cream of chicken soup (1 can)
  • 3/4 cup reduced-sodium beef broth
  • 2 cups sliced mushrooms
  • 1 small onion, sliced

Instructions

  1. Preheat olive oil over medium-high heat. Season pork chops with salt, pepper, paprika, and garlic powder.
  2. Sear the pork chops on each side until browned (about 3 minutes per side), then remove from the pan.
  3. In the same pan, add soups and beef broth, whisking to release any browned bits from the bottom.
  4. Place sliced mushrooms and onions in the bottom of a 6-quart slow cooker. Layer the pork chops on top.
  5. Pour the soup mixture over the pork chops.
  6. Cook on low for 7-8 hours, or until the pork is tender and easily falls apart. For a thicker sauce, create a slurry (see notes) and stir it in before serving.
  7. Serve warm over mashed potatoes, rice, or noodles for the ultimate comfort meal.
