Ingredients

  • 1 pork belly (about 2 lbs)
  • Salt and black pepper, to taste
  • 1/2 teaspoon Cayenne pepper (optional)
  • 1 tablespoon olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 cup chicken stock
  • 3 tablespoons honey
  • 4 garlic cloves, minced
  • 1 tablespoon Italian seasoning
  • Fresh black pepper, to taste

Instructions

  1. Score the pork belly skin diagonally in a diamond pattern. Rub salt, black pepper, and Cayenne pepper into the skin.
  2. In a skillet, heat olive oil over medium heat. Sear the pork belly, skin side down, for 3 minutes until crisp and golden.
  3. Lightly oil your slow cooker. Transfer the pork belly, placing it skin side up.
  4. In a bowl, mix balsamic vinegar, chicken stock, honey, garlic, olive oil, Italian seasoning, and black pepper. Pour over the pork belly.
  5. Cook on HIGH for 4 hours or on LOW for 7 hours.
  6. When done, slice to desired thickness and serve warm with rice, noodles, or in sandwiches.
