Ingredients
- 1 pork belly (about 2 lbs)
- Salt and black pepper, to taste
- 1/2 teaspoon Cayenne pepper (optional)
- 1 tablespoon olive oil
- 1/4 cup balsamic vinegar
- 1/2 cup chicken stock
- 3 tablespoons honey
- 4 garlic cloves, minced
- 1 tablespoon Italian seasoning
- Fresh black pepper, to taste
Instructions
- Score the pork belly skin diagonally in a diamond pattern. Rub salt, black pepper, and Cayenne pepper into the skin.
- In a skillet, heat olive oil over medium heat. Sear the pork belly, skin side down, for 3 minutes until crisp and golden.
- Lightly oil your slow cooker. Transfer the pork belly, placing it skin side up.
- In a bowl, mix balsamic vinegar, chicken stock, honey, garlic, olive oil, Italian seasoning, and black pepper. Pour over the pork belly.
- Cook on HIGH for 4 hours or on LOW for 7 hours.
- When done, slice to desired thickness and serve warm with rice, noodles, or in sandwiches.
