  • 3 tablespoons olive oil
  • 2 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, maple syrup, ground cinnamon, ground nutmeg, salt, and pepper. Mix well.
  3. Add the sweet potato cubes to the bowl and toss until they are evenly coated with the maple syrup mixture.
  4. Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized.
