Ingredients
- 2 tablespoons soy sauce
- 2 tablespoons rice wine vinegar
- 2 tablespoons maple syrup
- 1 tablespoon white miso paste
- 1 teaspoon grated fresh ginger
- 4 x 150g salmon fillets, skin on
- 3 spring onions, finely sliced
- 1 teaspoon lightly toasted sesame seeds (black or white)
- 1 tablespoon crisp fried shallots
- Asian slaw to serve
Instructions
- In a small saucepan, whisk together the soy sauce, rice wine vinegar, maple syrup, miso paste, and grated ginger over medium heat until it bubbles. Remove from heat and set aside.
- Heat a thin layer of oil in a large frying pan over medium-high heat.
- Place the salmon fillets skin-side down and cook for 3 minutes.
- Carefully flip the fillets and cook for another 2 minutes. The salmon will be slightly pink in the center, but cook longer if you prefer it fully cooked.
- Remove the pan from heat and drizzle the caramel miso glaze over the salmon fillets.
- Sprinkle with spring onions, sesame seeds, and fried shallots.
