Ingredients

  • 2 tablespoons soy sauce
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon white miso paste
  • 1 teaspoon grated fresh ginger
  • 4 x 150g salmon fillets, skin on
  • 3 spring onions, finely sliced
  • 1 teaspoon lightly toasted sesame seeds (black or white)
  • 1 tablespoon crisp fried shallots
  • Asian slaw to serve

Instructions

  1. In a small saucepan, whisk together the soy sauce, rice wine vinegar, maple syrup, miso paste, and grated ginger over medium heat until it bubbles. Remove from heat and set aside.
  2. Heat a thin layer of oil in a large frying pan over medium-high heat.
  3. Place the salmon fillets skin-side down and cook for 3 minutes.
  4. Carefully flip the fillets and cook for another 2 minutes. The salmon will be slightly pink in the center, but cook longer if you prefer it fully cooked.
  5. Remove the pan from heat and drizzle the caramel miso glaze over the salmon fillets.
  6. Sprinkle with spring onions, sesame seeds, and fried shallots.
  7. Serve immediately with a side of Asian slaw.
